Mexicali Fajitas



INGREDIENTS
2 Southwestern Style Marathon Chicken Patties®
2 Bell Peppers (Any Color) – Stemmed, Quartered and Sliced
into ½ Inch Strips
1 Medium Onion (Red or Yellow) – Quartered and Sliced
into ½ Inch Strips
1 Jalapeno - Stemmed and Sliced into ½ Inch Strips
1 Lime
1 ½ Tablespoon Olive Oil
1 Teaspoon Chili Powder
1 Teaspoon Cumin
½ Teaspoon Salt
½ Teaspoon Paprika
½ Teaspoon Garlic Powder
PREPERATION
Mix chili powder, cumin, salt, paprika and garlic powder
in a small prep bowl.

Place sliced bell peppers, onion and jalapeno in a medium bowl. Add 1 tablespoon of extra virgin olive oil, spices and the juice
of 1 lime and mix thoroughly.

Heat 1/2 tablespoon of olive oil in a large non-stick pan over medium-high heat. Once hot, cook two frozen Southwestern Style Marathon Chicken Patties® over medium-heat for 5 minutes. Flip Chicken Patties and cook for another 5 minutes.

Remove Chicken Patties from the pan and place on a cutting board. Add marinated peppers and onions to the pan and sauté for
3 to 4 minutes until tender. While peppers and onions cook,
warm tortillas.

Slice or cube the Chicken Patties and return to the pan. Cook together with the peppers and onions for 1 minute.
