Our mouthwatering Mediterranean Style chicken
patties is the star of this satisfying salad.

INGREDIENTS

PREPERATION

2 Mediterranean Style Marathon Chicken Patties®
5 oz (Small Package) – Baby Spring Mix
1 Small Red Onion – Quartered and Sliced into 1/4 Inch Strips
1 Cup Grape Tomatoes – Halved lengthwise
1 Can Chickpeas – Drained, Rinsed and Patted Dry
2 teaspoons Extra Virgin Olive Oil

 

FOR THE DRESSING:

½ Cup Extra Virgin Olive Oil
1 Teaspoon Garlic – Minced
½ Teaspoon Dijon Mustard
3 Table Spoons Vinegar (Red or Champagne)
½ Teaspoon Salt
¼ Teaspoon Black Pepper
¼ Teaspoon Dried Oregano

Pre-Heat oven to 400 degrees.

Place chickpeas in a mixing bowl and toss with 1 teaspoon of Extra Virgin Olive Oil. Lightly season with salt and pepper.

Spread chickpeas evenly on the baking sheet and roast for 20 minutes or until crispy.

While the chickpeas roast, mix the Baby Spring Mix, Red Onion and Grape Tomatoes in a large mixing bowl.

For the dressing, whisk together the Extra Virgin Olive Oil, Garlic, Mustard, Vinegar, Salt, Pepper and Oregano until the ingredients are well mixed.

Heat 1/2 tablespoon of olive oil in a large non-stick pan over medium-high heat. Once hot, cook two frozen Mediterranean Style Marathon Chicken Patties® over medium-heat for 5 minutes. Flip Chicken Patties and cook for another 5 minutes.

Remove Chicken Patties from the pan and place on a cutting board. Slice or cube the Chicken Patties and add to the mixing bowl with the salad.

Add dressing to the salad and toss until well mixed. Add roast chickpeas for a crunch.
